  • 4 cups mashed potatoes (homemade or leftover)
  • 1 cup sour cream
  • 1 cup shredded cheddar cheese
  • 1/2 cup cream cheese, softened
  • 1/4 cup milk
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup cooked bacon, crumbled
  • 1/4 cup chopped green onions (for garnish)
  • 1/2 cup shredded mozzarella cheese (for topping)

Instructions

  • Preheat your oven to 350°F (175°C).
  • In a large mixing bowl, combine the mashed potatoes, sour cream, cream cheese, milk, garlic powder, onion powder, salt, and pepper. Mix until smooth.
  • Fold in the shredded cheddar cheese and half of the crumbled bacon.
  • Transfer the potato mixture into a greased 9×13-inch baking dish.
  • Sprinkle the top with mozzarella cheese and the remaining bacon.
  • Bake in the preheated oven for 25-30 minutes or until the cheese is melted and bubbly.
  • Remove from the oven and let it cool for a few minutes. Garnish with chopped green onions before serving.
