Ingredients

  • 1 large egg
  • 1 cup breadcrumbs
  • Salt and pepper, to taste
  • Oil for frying

Instructions

  1. Prepare the mashed potatoes by boiling and mashing them with butter, salt, and pepper.
  2. Combine mashed potatoes, cheese, bacon, and green onions in a bowl.
  3. Form the mixture into golf ball-sized balls.
  4. Set up a breading station with flour, beaten egg, and breadcrumbs; coat each ball in this order.
  5. Heat oil in a skillet and fry the balls until golden brown, about 3-4 minutes per side.
  6. Drain on paper towels and serve hot.
