  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 3 cups beef broth
  • 2 cups diced potatoes (about 2 medium potatoes)
  • 1 cup shredded carrots
  • 1 cup cheddar cheese, shredded
  • 1 cup milk
  • 2 tablespoons flour
  • 1 tablespoon Worcestershire sauce
  • Salt and pepper to taste
  • Optional toppings: crispy bacon, green onions, pickles

Instructions

  • In a large pot, brown the ground beef over medium heat until fully cooked. Drain any excess fat.
  • Add the chopped onion and minced garlic. Sauté for about 3-4 minutes until the onion becomes translucent.
  • Pour in the beef broth and bring to a simmer.
  • Add the diced potatoes and shredded carrots. Cover and let it cook for about 15-20 minutes until the potatoes are tender.
  • In a small bowl, whisk the milk and flour together until smooth. Gradually add this mixture to the pot, stirring constantly.
  • Stir in Worcestershire sauce and shredded cheese. Cook for another 5 minutes until the cheese is melted and the soup is creamy.
