- 1 pound ground beef
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 3 cups beef broth
- 2 cups diced potatoes (about 2 medium potatoes)
- 1 cup shredded carrots
- 1 cup cheddar cheese, shredded
- 1 cup milk
- 2 tablespoons flour
- 1 tablespoon Worcestershire sauce
- Salt and pepper to taste
- Optional toppings: crispy bacon, green onions, pickles
Instructions
- In a large pot, brown the ground beef over medium heat until fully cooked. Drain any excess fat.
- Add the chopped onion and minced garlic. Sauté for about 3-4 minutes until the onion becomes translucent.
- Pour in the beef broth and bring to a simmer.
- Add the diced potatoes and shredded carrots. Cover and let it cook for about 15-20 minutes until the potatoes are tender.
- In a small bowl, whisk the milk and flour together until smooth. Gradually add this mixture to the pot, stirring constantly.
- Stir in Worcestershire sauce and shredded cheese. Cook for another 5 minutes until the cheese is melted and the soup is creamy.
- Season with salt and pepper to taste. Serve hot with your favorite toppings!
