- 2 pounds Yukon Gold potatoes
- 1/2 cup sour cream
- 1/2 cup ranch dressing
- 1 cup shredded cheddar cheese
- 1/2 cup cooked and crumbled bacon
- 2 green onions, sliced
- Salt and pepper to taste
- 2 tablespoons olive oil
Instructions
- Peel and cut the Yukon Gold potatoes into quarters. Place them in a large pot and cover with water. Add a pinch of salt.
- Bring the pot to a boil over medium-high heat. Cook the potatoes for about 15-20 minutes or until they’re fork-tender.
- Drain the potatoes and return them to the pot. Mash them gently with a potato masher.
- Add the sour cream, ranch dressing, olive oil, salt, and pepper to the pot. Stir until well combined.
- Transfer the mashed potatoes to a baking dish. Gently smash the potatoes with a fork or the back of a spoon. Drizzle a bit of olive oil on top.
- Sprinkle shredded cheddar cheese and crumbled bacon over the smashed potatoes.
- Bake in a preheated oven at 400°F for 15-20 minutes, or until the cheese is melted and bubbly.
- Remove from the oven and garnish with sliced green onions. Serve warm and enjoy!
