Deliciously creamy smashed potatoes loaded with cheddar cheese, ranch dressing, and crispy bacon. Perfect as a side dish!

  • 2 pounds Yukon Gold potatoes
  • 1/2 cup sour cream
  • 1/2 cup ranch dressing
  • 1 cup shredded cheddar cheese
  • 1/2 cup cooked and crumbled bacon
  • 2 green onions, sliced
  • Salt and pepper to taste
  • 2 tablespoons olive oil

Instructions

  • Peel and cut the Yukon Gold potatoes into quarters. Place them in a large pot and cover with water. Add a pinch of salt.
  • Bring the pot to a boil over medium-high heat. Cook the potatoes for about 15-20 minutes or until they’re fork-tender.
  • Drain the potatoes and return them to the pot. Mash them gently with a potato masher.
  • Add the sour cream, ranch dressing, olive oil, salt, and pepper to the pot. Stir until well combined.
  • Transfer the mashed potatoes to a baking dish. Gently smash the potatoes with a fork or the back of a spoon. Drizzle a bit of olive oil on top.
  • Sprinkle shredded cheddar cheese and crumbled bacon over the smashed potatoes.
  • Bake in a preheated oven at 400°F for 15-20 minutes, or until the cheese is melted and bubbly.
  • Remove from the oven and garnish with sliced green onions. Serve warm and enjoy!
