- 2 pounds russet potatoes (peeled and diced)
- 1/2 cup milk (or heavy cream for extra richness)
- 4 tablespoons butter

- 1 cup shredded cheddar cheese
- 6 slices bacon (cooked and crumbled)
- 1/4 cup sour cream (optional)
- 2 green onions (chopped, optional)
Instructions
- Start by boiling the potatoes in salted water for about 15-20 minutes, or until they’re fork-tender.
- Once cooked, drain the potatoes and return them to the pot. This helps them dry out a bit, which makes for fluffier mashed potatoes.
- Add in the butter and milk, then mash until smooth. Season with salt and pepper to taste.
- Next, fold in half of the shredded cheese and half of the crumbled bacon.
- To serve, spoon the mashed potatoes into bowls and top with the remaining cheese, bacon, sour cream, and green onions if desired.
