  • 1 cup fresh raspberries

Instructions

  • Preheat your oven to 350°F (175°C). Grease and flour a 9-inch round cake pan.
  • In a mixing bowl, cream the softened butter and sugar together until light and fluffy. This should take about 3-4 minutes.
  • Add the eggs one at a time, mixing well after each addition. Then, mix in the lemon zest, lemon juice, and vanilla extract.
  • In another bowl, whisk together the flour, baking powder, baking soda, and salt.
  • Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Be careful not to overmix!
  • Gently fold in the raspberries, ensuring they’re evenly distributed throughout the batter.
  • Pour the batter into the prepared cake pan. Smooth the top with a spatula.
  • Bake in the preheated oven for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
  • Allow the cake to cool in the pan for 10 minutes, then turn it out onto a wire rack to cool completely.
