  • 4 pieces bone-in, skin-on chicken thighs
  • 2 tablespoons olive oil
  • 1 tablespoon lemon pepper seasoning
  • 1 teaspoon garlic powder
  • 1 lemon zested and juiced

Instructions

  • Preheat your oven to 425°F (220°C).
  • In a large bowl, combine olive oil, lemon juice, lemon zest, garlic powder, lemon pepper seasoning, and salt.
  • Add the chicken thighs into the bowl, making sure they are fully coated in the marinade. Let them marinate for at least 15 minutes, or up to an hour for more flavor.
  • Place the marinated thighs skin-side up on a baking sheet lined with parchment paper.
  • Bake in the preheated oven for 30-35 minutes, or until the internal temperature reaches 165°F (74°C) and the skin is crispy.
  • Optional: Broil for an additional 2-3 minutes for extra crispiness.
  • Remove from the oven, let them rest for a few minutes, then garnish with fresh parsley before serving.
