- 2 tablespoons olive oil
- 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
- 1 cup orzo pasta
- 4 cups chicken broth
- 2 tablespoons lemon pepper seasoning
- 1 teaspoon garlic powder
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- Juice of 1 lemon
- Fresh parsley, chopped (for garnish)
Instructions
- Heat the olive oil in a large skillet over medium heat. Once hot, add the chicken pieces and season with salt, black pepper, and lemon pepper seasoning. Cook for 5-7 minutes until the chicken is golden brown and cooked through.
- Add the orzo and garlic powder to the skillet, stirring to combine.
- Pour in the chicken broth and bring the mixture to a gentle boil. Lower the heat to a simmer and cover the skillet. Cook for about 10-12 minutes, or until the orzo is tender and has absorbed most of the liquid.
- Once cooked, stir in the lemon juice and adjust seasoning if necessary. Remove from heat and garnish with fresh parsley before serving.
