- 4 cups kale (chopped, Lacinato preferred for tenderness.)
- 1/2 cup Parmesan cheese (grated.)
- 1/4 cup lemon juice (freshly squeezed if possible.)
- 1/4 cup olive oil
- 1 clove garlic (minced.)
- Salt and pepper (to taste.)
- 1/4 cup pine nuts (toasted.)
- 1/4 cup dried cranberries (optional.)
Instructions
- Wash and chop the kale thoroughly, then dry and chop into bite-sized pieces.
- Whisk together the lemon juice, olive oil, minced garlic, salt, and pepper in a small bowl.
- Pour dressing over the kale and massage into the leaves for 2-3 minutes.
- Add grated Parmesan cheese and toasted pine nuts (and cranberries if using); toss everything together.
- Serve immediately or chill for 30 minutes to enhance the flavors.
