- 1 pound boneless, skinless chicken breasts
- 1 cup uncooked white rice
- 2 cups chicken broth
- 1/2 cup grated Parmesan cheese
- 1 lemon (juiced and zested)
- 2 tablespoons olive oil
- 3 cloves garlic (minced)
- Salt and pepper to taste
- Fresh parsley for garnish (optional)
Instructions
- Start by preheating your oven to 375°F (190°C). This will get things moving while you prep.
- In a large oven-safe skillet, heat the olive oil over medium-high heat. Season the chicken breasts with salt and pepper, then add them to the skillet. Cook for about 5-7 minutes per side, until they are golden brown.
- Once the chicken is cooked, add the minced garlic and sauté for about 30 seconds until fragrant. Then, add the rice, chicken broth, lemon juice, and zest. Stir well to combine.
- Bring the mixture to a boil. Cover the skillet with a lid or aluminum foil and transfer it to the preheated oven.
- Bake for 25 minutes or until the rice is tender and has absorbed the liquid. Remove from the oven and sprinkle with grated Parmesan cheese. Cover again and let it sit for 5 minutes.
