    • 3 large eggs
    • 1/2 cup sour cream
    • 1/4 cup fresh lemon juice
    • 1 tablespoon lemon zest
  • For the meringue topping:
    • 4 large egg whites
    • 1 cup sugar
    • 1/4 teaspoon cream of tartar

Instructions

  1. Preheat oven to 350°F (175°C) and mix graham cracker crumbs, sugar, and melted butter.
  2. Press mixture into a 9-inch springform pan and bake for 8-10 minutes; cool.
  3. Beat cream cheese until smooth, add sugar, then eggs one at a time, followed by sour cream, lemon juice, and zest.
  4. Pour filling into crust and bake for 45 minutes; turn off oven and let it sit for 1 hour.
  5. Beat egg whites until soft peaks, then add sugar and cream of tartar until stiff peaks form.
  6. Spread meringue over cheesecake and bake for 10-15 minutes until golden; cool.
  7. Refrigerate for at least 4 hours, then remove springform sides and slice to serve.
