- 4 fillets salmon (about 6 ounces each)
- 2 tablespoons olive oil
- 1 lemon (zested and juiced)
- 2 teaspoons dried oregano
- 2 teaspoons garlic powder
- to taste Salt and pepper
- 1 pound asparagus, trimmed
- 1 cup cherry tomatoes, halved
- for garnish Fresh parsley (optional)
Instructions
- Preheat your oven to 400°F (200°C).
- Line a large sheet pan with parchment paper or foil for easy cleanup.
- In a small bowl, mix olive oil, lemon juice, lemon zest, oregano, garlic powder, salt, and pepper.
- Place the salmon fillets on one side of the sheet pan and brush them generously with the lemon herb mixture.
- On the other side, arrange the asparagus and cherry tomatoes. Drizzle with the remaining lemon herb mixture.
- Bake for 12-15 minutes, or until the salmon flakes easily with a fork and the vegetables are tender.
- Garnish with fresh parsley if desired. Serve warm and enjoy!
