A quick and easy sheet pan meal featuring salmon and seasonal vegetables, all flavored with lemon and herbs.

  • 4 fillets salmon (about 6 ounces each)
  • 2 tablespoons olive oil
  • 1 lemon (zested and juiced)
  • 2 teaspoons dried oregano
  • 2 teaspoons garlic powder
  • to taste Salt and pepper
  • 1 pound asparagus, trimmed
  • 1 cup cherry tomatoes, halved
  • for garnish Fresh parsley (optional)

Instructions

  • Preheat your oven to 400°F (200°C).
  • Line a large sheet pan with parchment paper or foil for easy cleanup.
  • In a small bowl, mix olive oil, lemon juice, lemon zest, oregano, garlic powder, salt, and pepper.
  • Place the salmon fillets on one side of the sheet pan and brush them generously with the lemon herb mixture.
  • On the other side, arrange the asparagus and cherry tomatoes. Drizzle with the remaining lemon herb mixture.
  • Bake for 12-15 minutes, or until the salmon flakes easily with a fork and the vegetables are tender.
  • Garnish with fresh parsley if desired. Serve warm and enjoy!
