  • 2 tablespoons olive oil
  • 2 lemons (one for juice, one sliced for garnish)
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme

  • 1 pound asparagus, trimmed
  • 1 cup cherry tomatoes, halved

Instructions

  • Preheat your oven to 400°F (200°C). This ensures that your salmon cooks evenly.
  • Line a large baking sheet with parchment paper for easy cleanup.
  • In a small bowl, whisk together the olive oil, lemon juice, garlic, oregano, thyme, salt, and pepper.
  • Place the salmon fillets on the prepared baking sheet. Brush them with the olive oil mixture.
  • Add the asparagus and cherry tomatoes around the salmon on the baking sheet.
  • Top the salmon with lemon slices for added flavor.
  • Bake for 15-20 minutes, or until the salmon flakes easily with a fork.
