  • 1 lb salmon fillet
  • 1 cup orzo pasta
  • 2 cups vegetable or chicken broth
  • 1 cup cherry tomatoes, halved
  • 1 cup zucchini, diced
  • 1/4 cup fresh parsley, chopped
  • 1 lemon juiced and zested
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • to taste Salt and pepper
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme

Instructions

  • Preheat your oven to 375°F (190°C).
  • In a large baking dish, combine the orzo, broth, cherry tomatoes, zucchini, garlic, lemon juice, olive oil, salt, pepper, oregano, and thyme. Stir well.
  • Place the salmon fillet on top of the orzo mixture. Season the salmon with additional salt, pepper, and lemon zest.
  • Cover the baking dish with aluminum foil and bake for 25 minutes.
  • Remove the foil and bake for an additional 15-20 minutes, or until the salmon flakes easily with a fork and the orzo is tender.
  • Sprinkle fresh parsley over the dish before serving.
