- 1 lb salmon fillet
- 1 cup orzo pasta
- 2 cups vegetable or chicken broth
- 1 cup cherry tomatoes, halved
- 1 cup zucchini, diced
- 1/4 cup fresh parsley, chopped
- 1 lemon juiced and zested
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- to taste Salt and pepper
- 1 teaspoon dried oregano
- 1 teaspoon dried thyme
Instructions
- Preheat your oven to 375°F (190°C).
- In a large baking dish, combine the orzo, broth, cherry tomatoes, zucchini, garlic, lemon juice, olive oil, salt, pepper, oregano, and thyme. Stir well.
- Place the salmon fillet on top of the orzo mixture. Season the salmon with additional salt, pepper, and lemon zest.
- Cover the baking dish with aluminum foil and bake for 25 minutes.
- Remove the foil and bake for an additional 15-20 minutes, or until the salmon flakes easily with a fork and the orzo is tender.
- Sprinkle fresh parsley over the dish before serving.
