  • 1 pound boneless, skinless chicken breasts (cut into 1-inch cubes)
  • 1/4 cup olive oil
  • 1/4 cup fresh lemon juice (about 2 lemons)
  • 2 tablespoons fresh parsley (chopped)
  • 2 tablespoons fresh basil (chopped)
  • 2 cloves garlic (minced)
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 bell pepper (cut into chunks)
  • 1 zucchini (sliced into thick rounds)
  • as needed Metal or wooden skewers (if using wooden skewers, soak them in water for 30 minutes)

Instructions

  • In a mixing bowl, combine olive oil, lemon juice, parsley, basil, garlic, salt, and pepper. Mix well.
  • Add the chicken cubes to the marinade and coat evenly. Let it marinate for at least 30 minutes (or up to 2 hours for more flavor).
  • While the chicken is marinating, prepare your vegetables. Cut them into bite-sized pieces.
  • Thread the marinated chicken and vegetables onto skewers, alternating as you go.
  • Preheat your grill to medium-high heat. Once hot, place the skewers on the grill.
  • Grill for about 10-12 minutes, turning occasionally, until the chicken is cooked through and has nice grill marks.
