- 1 pound boneless, skinless chicken breasts (cut into 1-inch cubes)
- 1/4 cup olive oil
- 1/4 cup fresh lemon juice (about 2 lemons)
- 2 tablespoons fresh parsley (chopped)
- 2 tablespoons fresh basil (chopped)
- 2 cloves garlic (minced)
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 bell pepper (cut into chunks)
- 1 zucchini (sliced into thick rounds)
- as needed Metal or wooden skewers (if using wooden skewers, soak them in water for 30 minutes)
Instructions
- In a mixing bowl, combine olive oil, lemon juice, parsley, basil, garlic, salt, and pepper. Mix well.
- Add the chicken cubes to the marinade and coat evenly. Let it marinate for at least 30 minutes (or up to 2 hours for more flavor).
- While the chicken is marinating, prepare your vegetables. Cut them into bite-sized pieces.
- Thread the marinated chicken and vegetables onto skewers, alternating as you go.
- Preheat your grill to medium-high heat. Once hot, place the skewers on the grill.
- Grill for about 10-12 minutes, turning occasionally, until the chicken is cooked through and has nice grill marks.
