- 4 pieces boneless, skinless chicken breasts
- 1/4 cup olive oil
- 2 pieces lemons, juiced
- 1 piece lemon, zested
- 3 cloves garlic, minced
- 1 tablespoon fresh rosemary, chopped (or 1 teaspoon dried)
- 1 tablespoon fresh thyme, chopped (or 1 teaspoon dried)
- Salt and pepper to taste
Instructions
- In a bowl, whisk together the olive oil, lemon juice, zest, garlic, rosemary, thyme, salt, and pepper.
- Add the chicken breasts to the marinade, ensuring they are well coated. Cover and refrigerate for at least 30 minutes, or up to 4 hours for more flavor.
- Preheat your grill or oven to 375°F (190°C).
- If grilling, cook the chicken for about 6-7 minutes per side until cooked through. If baking, place the chicken on a baking sheet and bake for 25-30 minutes, or until the juices run clear.
- Let the chicken rest for 5 minutes, then slice and serve!
