  • 1/4 cup olive oil
  • 2 pieces lemons, juiced
  • 1 piece lemon, zested
  • 3 cloves garlic, minced
  • 1 tablespoon fresh rosemary, chopped (or 1 teaspoon dried)
  • 1 tablespoon fresh thyme, chopped (or 1 teaspoon dried)
  • Salt and pepper to taste

Instructions

  • In a bowl, whisk together the olive oil, lemon juice, zest, garlic, rosemary, thyme, salt, and pepper.
  • Add the chicken breasts to the marinade, ensuring they are well coated. Cover and refrigerate for at least 30 minutes, or up to 4 hours for more flavor.
  • Preheat your grill or oven to 375°F (190°C).
  • If grilling, cook the chicken for about 6-7 minutes per side until cooked through. If baking, place the chicken on a baking sheet and bake for 25-30 minutes, or until the juices run clear.
