- 4 fillets salmon (about 6 ounces each)
- 1 bunch asparagus (trimmed, about 1 pound)
- 1/4 cup unsalted butter (softened)
- 2 tablespoons fresh lemon juice
- 1 tablespoon lemon zest
- 2 cloves garlic (minced)
- 1 tablespoon fresh dill (chopped or your favorite herb)
- to taste salt and pepper
- 1 tablespoon olive oil
Instructions
- Preheat your oven to 400°F (200°C).
- In a medium bowl, mix the softened butter, lemon juice, lemon zest, minced garlic, dill, salt, and pepper until well combined.
- Place the salmon fillets skin-side down on a baking sheet lined with parchment paper. Drizzle olive oil over the asparagus and toss to coat.
- Spread the lemon herb butter generously over the top of each salmon fillet.
- Bake in the preheated oven for about 15-20 minutes, or until the salmon flakes easily with a fork and the asparagus is tender.
- Once done, remove from the oven and let it cool for a few minutes. Serve warm.
