  • 2 pounds baby potatoes, halved
  • 1/4 cup olive oil
  • 2 lemons Juice of
  • 1 teaspoon dried oregano
  • to taste Salt and pepper
  • 1 cup crumbled feta cheese
  • 1/4 cup fresh parsley, chopped

Instructions

  • Preheat your oven to 425°F (220°C).
  • In a large bowl, combine the halved baby potatoes, olive oil, lemon juice, oregano, salt, and pepper. Toss well to coat the potatoes evenly.
  • Spread the potatoes in a single layer on a baking sheet.
  • Roast the potatoes in the preheated oven for 25-30 minutes, or until they are golden brown and tender. Toss them halfway through for even cooking.
  • Remove the potatoes from the oven and sprinkle the crumbled feta cheese on top.
  • Return the baking sheet to the oven and bake for an additional 5 minutes, just until the feta starts to soften.
  • Remove from the oven and garnish with fresh parsley before serving.
