  • 1 box yellow cake mix (Use gluten-free if desired.)
  • 1/2 cup unsalted butter (Melted.)
  • 1 large egg
  • 8 oz cream cheese (Softened.)
  • 2 large eggs
  • 4 cups powdered sugar
  • 1/4 cup fresh lemon juice
  • 1 tbsp lemon zest
  • 1 tsp vanilla extract

Instructions

  • Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking pan.
  • In a large bowl, combine the yellow cake mix, melted butter, and 1 egg. Mix until well blended.
  • Press the mixture evenly into the bottom of the prepared pan. This will form the base layer.
  • In another bowl, beat the softened cream cheese until smooth. Add in the eggs, powdered sugar, lemon juice, lemon zest, and vanilla extract. Mix until fully combined.
  • Pour the cream cheese mixture over the cake base evenly.
  • Bake in the preheated oven for 40-45 minutes. The edges should be set, but the center will still be slightly jiggly.
