  • 1 cup powdered sugar
  • 2 tablespoons fresh lemon juice

Instructions

  • Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
  • In a large bowl, cream together the softened butter and granulated sugar until light and fluffy.
  • Add in the egg, lemon zest, and vanilla extract, mixing until well combined.
  • In another bowl, whisk together the all-purpose flour, almond flour, salt, and baking powder.
  • Gradually mix the dry ingredients into the wet mixture until fully combined.
  • Scoop tablespoon-sized portions of dough, rolling them into balls, and place them on the prepared baking sheet.
  • Bake for 12-15 minutes or until the edges are golden brown.
  • While the cookies cool, prepare the glaze by whisking together powdered sugar and lemon juice until smooth.
