- 1 cup all-purpose flour
- 1/2 cup almond flour
- 1/2 cup unsalted butter, softened
- 2/3 cup granulated sugar
- 1 large egg
- 1 tablespoon lemon zest
- 1 teaspoon vanilla extract
- 1/4 teaspoon salt
- 1/2 teaspoon baking powder
- 1 cup powdered sugar
- 2 tablespoons fresh lemon juice
Instructions
- Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
- In a large bowl, cream together the softened butter and granulated sugar until light and fluffy.
- Add in the egg, lemon zest, and vanilla extract, mixing until well combined.
- In another bowl, whisk together the all-purpose flour, almond flour, salt, and baking powder.
- Gradually mix the dry ingredients into the wet mixture until fully combined.
- Scoop tablespoon-sized portions of dough, rolling them into balls, and place them on the prepared baking sheet.
- Bake for 12-15 minutes or until the edges are golden brown.
- While the cookies cool, prepare the glaze by whisking together powdered sugar and lemon juice until smooth.
- Once the cookies are cool, drizzle the glaze over the tops and let it set.
