- 4 breasts boneless, skinless chicken
- 1/4 cup olive oil
- 2 lemons juiced and zested
- 4 cloves garlic (minced)
- 1 teaspoon dried oregano
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- Fresh parsley for garnish (optional)
Instructions
- Preheat your oven to 400°F (200°C).
- In a bowl, whisk together the olive oil, lemon juice, lemon zest, minced garlic, oregano, salt, and pepper.
- Place the chicken breasts in a baking dish and pour the marinade over them, ensuring they're well coated. Let it marinate for at least 30 minutes (or up to 2 hours in the fridge for more flavor).
- Bake the chicken for 25-30 minutes or until it reaches an internal temperature of 165°F (75°C). You’ll know it’s done when the juices run clear.
- Once baked, let the chicken rest for a few minutes before slicing. Garnish with fresh parsley if desired.
