A delicious Lemon Garlic Butter Shrimp and Spinach Tortellini dish that’s quick and easy to prepare.

Ingredients

  • 8 oz fresh spinach tortellini
  • 1 lb medium shrimp, peeled and deveined
  • 4 tablespoons unsalted butter
  • 4 cloves garlic, minced
  • 1 lemon, juiced and zested
  • 1 cup fresh spinach
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Boil salted water, add tortellini, and cook for 3-4 minutes; drain and set aside.
  2. Melt 2 tablespoons of butter in a skillet over medium heat, add shrimp, and sauté for 2-3 minutes on each side until pink; season with salt and pepper.
  3. Add minced garlic to the skillet and sauté for 30 seconds, then add fresh spinach and stir until wilted.
  4. Combine cooked tortellini with shrimp mixture, add lemon juice and zest, stir, and let remaining butter melt into the dish.
  5. Serve hot, garnished with fresh parsley.

Notes

  • Make sure the shrimp is cooked until pink and opaque.
  • Adjust seasoning with salt and pepper to taste.
