- 4 pieces cod fillets (about 6 ounces each)
- 1/4 cup unsalted butter (melted)
- 4 cloves garlic (minced)
- 1 medium lemon (juiced and zested)
- to taste salt
- to taste pepper
- 1/4 cup fresh parsley (chopped, for garnish)
Instructions
- Preheat your oven to 400°F (200°C).
- Grease a 9×13 inch baking dish with a little butter or oil.
- In a small saucepan, melt the butter over medium heat. Add the minced garlic and sauté for about 1 minute.
- Stir in the lemon juice and zest, and season with salt and pepper.
- Place the cod fillets in the prepared baking dish and pour the lemon garlic butter mixture over.
- Bake for about 12-15 minutes or until the fish flakes easily with a fork.
- Garnish with fresh parsley and serve immediately.
