A quick and flavorful dish featuring tender cod fillets baked in a zesty lemon garlic butter sauce.

  • 4 pieces cod fillets (about 6 ounces each)
  • 1/4 cup unsalted butter (melted)
  • 4 cloves garlic (minced)
  • 1 medium lemon (juiced and zested)
  • to taste salt
  • to taste pepper
  • 1/4 cup fresh parsley (chopped, for garnish)

Instructions

  • Preheat your oven to 400°F (200°C).
  • Grease a 9×13 inch baking dish with a little butter or oil.
  • In a small saucepan, melt the butter over medium heat. Add the minced garlic and sauté for about 1 minute.
  • Stir in the lemon juice and zest, and season with salt and pepper.
  • Place the cod fillets in the prepared baking dish and pour the lemon garlic butter mixture over.
  • Bake for about 12-15 minutes or until the fish flakes easily with a fork.
  • Garnish with fresh parsley and serve immediately.
