- 4 fillets salmon (about 6 oz each)
- 1 lb baby potatoes (halved)
- 1 tablespoon olive oil
- 2 tablespoons fresh dill (chopped (or 1 tablespoon dried dill))
- 2 tablespoons lemon juice
- 1 teaspoon garlic powder
- Salt and pepper (to taste)
- 1 lemon (sliced (for garnish))
Instructions
- Heat olive oil in a large skillet over medium heat.
- Add halved baby potatoes, season with salt, pepper, and garlic powder.
- Cook potatoes for 10-12 minutes until golden and fork-tender.
- Whisk dill, lemon juice, salt, and pepper in a small bowl.
- Push potatoes to one side and add salmon fillets, drizzle with the lemon-dill mixture.
- Cover and cook for 8-10 minutes until salmon flakes easily.
- Garnish with lemon slices and serve immediately.
