  • 1 lb baby potatoes (halved)
  • 1 tablespoon olive oil
  • 2 tablespoons fresh dill (chopped (or 1 tablespoon dried dill))
  • 2 tablespoons lemon juice
  • 1 teaspoon garlic powder
  • Salt and pepper (to taste)
  • 1 lemon (sliced (for garnish))

Instructions

  • Heat olive oil in a large skillet over medium heat.
  • Add halved baby potatoes, season with salt, pepper, and garlic powder.
  • Cook potatoes for 10-12 minutes until golden and fork-tender.
  • Whisk dill, lemon juice, salt, and pepper in a small bowl.
  • Push potatoes to one side and add salmon fillets, drizzle with the lemon-dill mixture.
  • Cover and cook for 8-10 minutes until salmon flakes easily.
  • Garnish with lemon slices and serve immediately.
