- 1 box lemon cake mix
- 8 oz cream cheese (softened)
- 1/2 cup sugar
- 1/2 cup butter (melted)
- 1 cup lemon juice (freshly squeezed or bottled)
- 2 large eggs
- 1 teaspoon vanilla extract
- Powdered sugar (for dusting (optional))
Instructions
- Preheat your oven to 350°F (175°C). Grease a 9×13 inch baking dish.
- In a large mixing bowl, beat the softened cream cheese until smooth. Add in the sugar and mix until well combined.
- Add the eggs, lemon juice, and vanilla extract to the cream cheese mixture. Mix until everything is evenly combined.
- In another bowl, combine the lemon cake mix with the melted butter. Stir until the mixture is crumbly.
- Pour the cream cheese mixture into the prepared baking dish and spread it evenly.
- Sprinkle the cake mix and butter mixture over the top of the cream cheese layer. Don’t worry about covering it perfectly; it’ll bake beautifully!
- Bake for 30-35 minutes or until the top is golden and a toothpick comes out clean.
- Let it cool for a bit before dusting with powdered sugar. Enjoy warm or at room temperature!
