- 1 can of chickpeas, drained and rinsed
- 1 medium lemon, zested and juiced
- 1 cup breadcrumbs
- 1/2 cup fresh parsley, chopped
- 1 teaspoon garlic powder
- 1 teaspoon cumin
- Salt and pepper, to taste
- 1/4 cup olive oil, for frying
- 1 cup plain yogurt
- 1 tablespoon tahini
- 1 tablespoon lemon juice (additional)
- 1 clove garlic, minced (optional)
Instructions
- Mash the drained chickpeas in a bowl until chunky yet cohesive.
- Add lemon zest, lemon juice, parsley, garlic powder, cumin, salt, and pepper; mix well.
- Shape the mixture into 8-10 small patties.
- Coat each patty in breadcrumbs.
- Fry the patties in heated olive oil for 3-4 minutes per side until golden brown.
- Prepare the yogurt sauce by mixing yogurt, tahini, lemon juice, minced garlic, and salt until smooth.
- Serve the patties warm with the yogurt sauce on the side.
