- 1.5 cups graham cracker crumbs
- 1/2 cup unsalted butter, melted
- 2 cups cream cheese, softened
- 1 cup granulated sugar
- 3 large eggs
- 1/4 cup sour cream
- 1/4 cup fresh lemon juice
- 1 tablespoon lemon zest
- 1 teaspoon vanilla extract
Instructions
- Preheat oven to 325°F (160°C). Combine graham cracker crumbs and melted butter, then press into the bottom of a 9-inch springform pan. Bake for 10 minutes and cool.
- Beat cream cheese until smooth, then add sugar, eggs (one at a time), sour cream, lemon juice, lemon zest, and vanilla; mix until combined.
- Pour filling over the cooled crust, smooth the top, and bake for 60 minutes until slightly jiggly. Turn off oven and leave cheesecake inside for 1 hour.
- Cool to room temperature, then refrigerate for at least 4 hours or overnight before serving.

- Top with additional lemon zest or fresh berries before serving.
