A quick and easy recipe for Lemon Butter Shrimp and Orzo that’s perfect for weeknight dinners. This dish combines succulent shrimp with creamy orzo and a bright lemon flavor.

  • Total Time: 30

Ingredients

Scale
  • 1 pound shrimp (peeled and deveined)
  • 1 cup orzo pasta
  • 1/4 cup unsalted butter
  • 2 tablespoons olive oil
  • 3 cloves garlic (minced)
  • 1 lemon juice and zest
  • 1/4 cup chicken broth (or vegetable broth)
  • Salt and pepper (to taste)
  • Fresh parsley (chopped (for garnish))
  • Optional (red pepper flakes for a kick)

Instructions

  • Start by cooking the orzo according to the package instructions. Usually, this takes about 8-10 minutes. Make sure to salt the water for added flavor.
  • In a large skillet, melt the butter and olive oil over medium heat. Swirl it around to combine the two.
  • Add the minced garlic and sauté for about 1 minute, just until fragrant.
  • Next, toss in the shrimp. Cook for about 3-4 minutes on each side until they turn pink and opaque.
  • Stir in the lemon juice, zest, and chicken broth. Allow it to simmer for another 2-3 minutes.
  • Once the orzo is cooked, drain it and add it to the skillet. Toss everything together.
  • Season with salt, pepper, and red pepper flakes if you like a bit of heat.
  • Garnish with fresh parsley and serve immediately.
