- 1 pound shrimp (peeled and deveined)
- 1 cup orzo pasta
- 1/4 cup unsalted butter
- 2 tablespoons olive oil
- 3 cloves garlic (minced)
- 1 lemon juice and zest
- 1/4 cup chicken broth (or vegetable broth)
- Salt and pepper (to taste)
- Fresh parsley (chopped (for garnish))
- Optional (red pepper flakes for a kick)
Instructions
- Start by cooking the orzo according to the package instructions. Usually, this takes about 8-10 minutes. Make sure to salt the water for added flavor.
- In a large skillet, melt the butter and olive oil over medium heat. Swirl it around to combine the two.
- Add the minced garlic and sauté for about 1 minute, just until fragrant.
- Next, toss in the shrimp. Cook for about 3-4 minutes on each side until they turn pink and opaque.
- Stir in the lemon juice, zest, and chicken broth. Allow it to simmer for another 2-3 minutes.
- Once the orzo is cooked, drain it and add it to the skillet. Toss everything together.
- Season with salt, pepper, and red pepper flakes if you like a bit of heat.
- Garnish with fresh parsley and serve immediately.
