  • 1 pound large sea scallops
  • 3 tablespoons unsalted butter
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 lemon juiced and zested
  • Salt and pepper, to taste
  • Fresh parsley, chopped for garnish

Instructions

  • Start by patting the scallops dry with paper towels. This helps them sear better.
  • In a large skillet, heat the olive oil and 1 tablespoon of butter over medium-high heat until hot.
  • Season the scallops with salt and pepper. Once the oil is hot, carefully place the scallops in the skillet, making sure not to overcrowd them.
  • Cook the scallops for about 2-3 minutes on one side until they develop a golden crust. Flip them over and cook for another 1-2 minutes.
  • Add the minced garlic to the pan and stir for about 30 seconds until fragrant.
  • Pour in the lemon juice and zest, then add the remaining butter. Stir until the butter is melted and coats the scallops.
  • Remove from heat and garnish with fresh parsley before serving. Enjoy immediately!
