- 1 pound large sea scallops
- 3 tablespoons unsalted butter
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1 lemon juiced and zested
- Salt and pepper, to taste
- Fresh parsley, chopped for garnish
Instructions
- Start by patting the scallops dry with paper towels. This helps them sear better.
- In a large skillet, heat the olive oil and 1 tablespoon of butter over medium-high heat until hot.
- Season the scallops with salt and pepper. Once the oil is hot, carefully place the scallops in the skillet, making sure not to overcrowd them.
- Cook the scallops for about 2-3 minutes on one side until they develop a golden crust. Flip them over and cook for another 1-2 minutes.
- Add the minced garlic to the pan and stir for about 30 seconds until fragrant.
- Pour in the lemon juice and zest, then add the remaining butter. Stir until the butter is melted and coats the scallops.
- Remove from heat and garnish with fresh parsley before serving. Enjoy immediately!
