- 4 ounces cod fillets (Make sure they are fresh or properly thawed.)
- 2 tablespoons butter (Use unsalted for better control over seasoning.)
- 2 tablespoons lemon juice (Freshly squeezed is ideal.)
- 1 teaspoon lemon zest (Adds a lovely aromatic quality.)
- 2 cloves garlic (Minced.)
- to taste salt and pepper (For seasoning.)
- to garnish fresh parsley (Chopped.)
- as needed olive oil (For cooking.)
Instructions
- Pat the cod fillets dry with paper towels and season with salt and pepper.
- In a large skillet, heat 1 tablespoon of olive oil over medium-high heat.
- Add the cod fillets and cook for 3-4 minutes on each side until golden and cooked through.
- Remove the fillets from the skillet and set aside on a plate.
- In the same skillet, reduce heat to medium and add butter.
- Once melted, stir in garlic, lemon juice, and lemon zest. Cook for 1 minute.
- Pour the sauce over the cod fillets and garnish with parsley.
