- 1/4 cup graham cracker crumbs (optional)
Instructions
- Start by beating the softened cream cheese in a mixing bowl until smooth.
- Add the powdered sugar, vanilla extract, lemon juice, and lemon zest. Mix until fully combined.
- In a separate bowl, whip the heavy cream until stiff peaks form. This usually takes about 2-3 minutes.
- Gently fold the whipped cream into the cream cheese mixture until well combined.
- In serving cups, layer the cheesecake mixture with mixed berries. If you’re using graham cracker crumbs, sprinkle some between the layers.
- Top with more berries and a little lemon zest for garnish. Chill in the fridge for at least 30 minutes before serving.
