  • 1 tablespoon culinary lavender (dried and crushed)
  • 1/2 cup chopped nuts (like almonds or walnuts – optional)
  • 1 large egg
  • 1 teaspoon vanilla extract

Instructions

  • Preheat your oven to 350°F (175°C).
  • In a mixing bowl, cream the softened butter and sugar together until light and fluffy.
  • Add the honey, egg, and vanilla extract, mixing until well combined.
  • In another bowl, whisk together the flour, baking powder, baking soda, salt, and crushed lavender.
  • Gradually add the dry ingredients to the wet mixture, stirring until just combined. If using nuts, fold them in now.
  • Drop spoonfuls of dough onto lined baking sheets, spacing them about 2 inches apart.
  • Bake for 10-12 minutes or until the edges are lightly golden. The centers might look a little underbaked, but they’ll firm up as they cool.
  • Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
