- 1/2 cup honey
- 2 cups all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1 tablespoon culinary lavender (dried and crushed)
- 1/2 cup chopped nuts (like almonds or walnuts – optional)
- 1 large egg
- 1 teaspoon vanilla extract
Instructions
- Preheat your oven to 350°F (175°C).
- In a mixing bowl, cream the softened butter and sugar together until light and fluffy.
- Add the honey, egg, and vanilla extract, mixing until well combined.
- In another bowl, whisk together the flour, baking powder, baking soda, salt, and crushed lavender.
- Gradually add the dry ingredients to the wet mixture, stirring until just combined. If using nuts, fold them in now.
- Drop spoonfuls of dough onto lined baking sheets, spacing them about 2 inches apart.
- Bake for 10-12 minutes or until the edges are lightly golden. The centers might look a little underbaked, but they’ll firm up as they cool.
- Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
