  • 1 pound ground beef or Italian sausage
  • 1 whole onion, chopped
  • 3 cloves garlic, minced
  • 1 can (28 oz) crushed tomatoes
  • 4 cups chicken or beef broth
  • 8 ounces lasagna noodles, broken into pieces
  • 1 teaspoon Italian seasoning
  • to taste Salt and pepper
  • 1 cup ricotta cheese
  • 1 cup shredded mozzarella cheese
  • for garnish Fresh basil

Instructions

  • In a large pot, brown the ground beef or sausage over medium heat until fully cooked, about 7-10 minutes. Drain any excess fat.
  • Add the chopped onion and minced garlic to the pot. Sauté until the onion becomes translucent, about 3-4 minutes.
  • Stir in the crushed tomatoes, broth, Italian seasoning, salt, and pepper. Bring the mixture to a gentle boil.
  • Add the broken lasagna noodles to the pot and reduce the heat to a simmer. Cook until the noodles are al dente, about 10-12 minutes.
  • In a bowl, mix together the ricotta cheese and a pinch of salt. This will add creaminess to your soup.
  • Once the noodles are cooked, ladle the soup into bowls. Top each serving with a dollop of ricotta and a generous sprinkle of mozzarella cheese.
