    • 1 bunch of asparagus, trimmed
    • 1 tablespoon olive oil
    • Salt and pepper to taste
    • 1/2 teaspoon lemon zest (optional)

Instructions

  • Prepare the Mashed Potatoes:
    • Place the cubed potatoes in a large pot of salted water. Bring to a boil and cook for 15-20 minutes, or until the potatoes are tender.
    • Drain the potatoes and return them to the pot. Add butter and milk, then mash until smooth. Season with salt and pepper to taste. Keep warm.
  • Cook the Asparagus:
    • Preheat the oven to 400°F (200°C).
    • Place the asparagus on a baking sheet, drizzle with olive oil, and season with salt, pepper, and lemon zest if using.
    • Roast for 10-12 minutes, or until tender but still crisp.
  • Cook the Lamb Chops:
    • While the asparagus is roasting, heat olive oil in a large skillet over medium-high heat.
    • Season the lamb chops with salt, pepper, garlic, and rosemary.
    • Sear the lamb chops in the skillet for 3-4 minutes on each side, or until they reach your desired doneness.
  • Serve:
    • Plate the lamb chops alongside the mashed potatoes and roasted asparagus. Serve immediately.
