- 1 green onion, finely chopped

Instructions
- Wash and dry the spinach; remove tough stems.
- In a small bowl, whisk together soy sauce, sesame oil, garlic, rice vinegar, and optional sugar.
- In a large bowl, combine spinach and drizzle with dressing; toss gently.
- Top with toasted sesame seeds and chopped green onion; toss again.
- Season with salt and pepper to taste.
- Serve immediately on a platter or in individual bowls.
