- 2 cups sweet corn (fresh or canned)
- 1 cup shredded mozzarella cheese
- 1/2 cup mayonnaise
- 1/4 cup cream cheese (softened)
- 2 tablespoons sugar
- 1 tablespoon butter
- 1 teaspoon garlic powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 cup chopped green onions (for garnish)
- 1/2 teaspoon gochugaru (optional for spice)
Instructions
- Preheat your oven to 350°F (175°C).
- In a large mixing bowl, combine the sweet corn, mayonnaise, cream cheese, sugar, garlic powder, salt, and black pepper. Mix until well combined.
- Fold in the shredded mozzarella cheese, reserving a handful for topping.
- Transfer the mixture to a baking dish and spread it evenly.
- Sprinkle the reserved cheese on top and dot with butter.
- Bake in the preheated oven for about 20-25 minutes, or until the cheese is bubbly and golden brown.
- Remove from the oven and let it cool for a few minutes.
- Garnish with chopped green onions and serve warm with tortilla chips or sliced veggies.
