- 1 pound Italian sausage (mild or spicy, your choice)
- 1 medium onion (chopped)
- 2 cloves garlic (minced)
- 4 cups chicken broth
- 1 can diced tomatoes ((14.5 oz), undrained)
- 1 cup baby spinach
- 1 package cheese tortellini ((9 oz))
- 1 teaspoon Italian seasoning
- Salt and pepper (to taste)
- Olive oil (for sautéing)
Instructions
- Start by heating a tablespoon of olive oil in a large pot over medium heat.
- Add the chopped onion and sauté for about 2-3 minutes until it becomes translucent.
- Stir in the minced garlic and cook for another minute, until fragrant.
- Add the Italian sausage to the pot, breaking it up with a spoon. Cook until browned, about 5-7 minutes.
- Pour in the chicken broth and add the diced tomatoes (with juice) and Italian seasoning. Bring it to a gentle simmer.
- Once simmering, add the tortellini and cook according to the package instructions, usually around 3-5 minutes.
- In the last minute of cooking, stir in the baby spinach until wilted.
- Season with salt and pepper to taste. Serve hot, and enjoy!
