  • 1 pound Italian sausage (mild or spicy, your choice)
  • 1 pound gnocchi (store-bought or homemade)
  • 1 tablespoon olive oil
  • 3 cloves garlic (minced)
  • 1/2 cup onion (diced)
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1 cup spinach (fresh or frozen)
  • Salt and pepper (to taste)
  • Fresh basil (for garnish)

Instructions

  • In a large skillet, heat the olive oil over medium heat. Add the diced onion and sauté until translucent, about 3-4 minutes.
  • Add the minced garlic and cook for another minute until fragrant.
  • Remove the casing from the Italian sausage and add it to the skillet. Break it apart with a spoon and cook until browned, about 5-7 minutes. Drain excess fat if necessary.
  • Meanwhile, cook the gnocchi according to package instructions. Drain and set aside.
  • Once the sausage is cooked, reduce the heat to low. Stir in the heavy cream and Parmesan cheese, mixing well.
  • Add the cooked gnocchi and spinach to the skillet, gently mixing everything until combined. Cook for an additional 2-3 minutes until spinach wilts.
  • Season with salt and pepper to taste. Serve hot, garnished with fresh basil.
