- 2 cups cooked chicken (shredded or diced)
- 1 cup diced salami
- 1 cup diced pepperoni
- 1 cup diced provolone cheese
- 1 cup cherry tomatoes (halved)
- 1/2 cup diced red onion
- 1/2 cup chopped fresh parsley
- 1/2 cup diced cucumber
- 1/3 cup Italian dressing
- to taste Salt and pepper
- 1/4 cup sliced black olives (optional)
Instructions
- In a large bowl, combine the cooked chicken, salami, pepperoni, and provolone cheese.
- Add the cherry tomatoes, red onion, parsley, and cucumber to the bowl. Toss gently to combine the ingredients.
- Drizzle the Italian dressing over the salad, mixing well until everything is coated.
- Season with salt and pepper to taste.
- If using, add the black olives and give it another gentle toss.
- Chill in the refrigerator for about 30 minutes to let the flavors meld together before serving.
