Ingredients

  • 4 boneless chicken breasts
  • 1 tablespoon olive oil
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 1 cup Irish whiskey
  • 1 cup heavy cream
  • 1 teaspoon Dijon mustard
  • Salt and pepper, to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Heat olive oil in a skillet; season chicken with salt and pepper, sear for 5-6 minutes per side, then set aside.
  2. Add onion and garlic to the skillet; sauté for 3-4 minutes until soft.
  3. Pour in Irish whiskey, scrape the bottom, and simmer for 2-3 minutes.
  4. Stir in heavy cream and Dijon mustard, return chicken to skillet, and cook for 5-7 minutes until the sauce thickens.
  5. Remove from heat, garnish with parsley, and serve.
