- 4 boneless chicken breasts
- 1 tablespoon olive oil
- 1 medium onion, finely chopped
- 2 cloves garlic, minced
- 1 cup Irish whiskey
- 1 cup heavy cream
- 1 teaspoon Dijon mustard
- Salt and pepper, to taste
- Fresh parsley, chopped (for garnish)
Instructions
- Heat olive oil in a skillet; season chicken with salt and pepper, sear for 5-6 minutes per side, then set aside.
- Add onion and garlic to the skillet; sauté for 3-4 minutes until soft.
- Pour in Irish whiskey, scrape the bottom, and simmer for 2-3 minutes.
- Stir in heavy cream and Dijon mustard, return chicken to skillet, and cook for 5-7 minutes until the sauce thickens.
- Remove from heat, garnish with parsley, and serve.

- This dish pairs well with mashed potatoes or steamed vegetables.
