  • 1/2 cup fresh pineapple, diced (optional)

Instructions

  • Preheat your oven to 400°F (200°C).
  • In a small bowl, whisk together pineapple juice, honey, soy sauce, Dijon mustard, and black pepper.
  • Place the salmon fillets skin-side down on a baking sheet lined with parchment paper.
  • Brush the fillets generously with the honey pineapple glaze.
  • Drizzle olive oil over the salmon for added moisture.
  • If using, sprinkle diced fresh pineapple around the fillets for extra flavor.
  • Bake in the preheated oven for 15-20 minutes, or until the salmon flakes easily with a fork.
