- 1/2 cup pineapple juice
- 1/4 cup honey
- 2 tablespoons soy sauce
- 1 tablespoon Dijon mustard
- 1/4 teaspoon black pepper

- 1/2 cup fresh pineapple, diced (optional)

Instructions
- Preheat your oven to 400°F (200°C).
- In a small bowl, whisk together pineapple juice, honey, soy sauce, Dijon mustard, and black pepper.
- Place the salmon fillets skin-side down on a baking sheet lined with parchment paper.
- Brush the fillets generously with the honey pineapple glaze.
- Drizzle olive oil over the salmon for added moisture.
- If using, sprinkle diced fresh pineapple around the fillets for extra flavor.
- Bake in the preheated oven for 15-20 minutes, or until the salmon flakes easily with a fork.
- Garnish with chopped green onions before serving.
