- 1 cup rolled oats
- 1/2 cup all-purpose flour
- 1/2 teaspoon baking soda
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon salt
- 1/2 cup unsalted butter, softened
- 1/2 cup honey
- 1/4 cup brown sugar, packed
- 1 teaspoon vanilla extract
- 1 large egg
- optional 1/4 cup chocolate chips or nuts
Instructions
- Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
- In a bowl, combine rolled oats, flour, baking soda, cinnamon, and salt. Mix well.
- In another bowl, cream the softened butter, honey, and brown sugar until light and fluffy.
- Add the vanilla extract and the egg to the butter mixture. Mix until well combined.
- Gradually add the dry ingredients to the wet mixture, stirring until just combined. If you’re adding chocolate chips or nuts, fold them in now.
- Drop spoonfuls of dough onto the prepared baking sheet, spacing them about 2 inches apart.
- Bake for 10-12 minutes, or until the edges are golden. The centers might look a bit soft—that's okay!
- Remove from the oven and let them cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
