  • 1/4 cup honey
  • 1/4 cup fresh lime juice (about 2-3 limes)
  • 2 cloves garlic (minced)
  • 1 teaspoon chili powder
  • 1/2 teaspoon cumin
  • Salt and pepper (to taste)
  • 8 small corn or flour tortillas
  • 1 cup shredded cabbage (green or purple)
  • 1 avocado (sliced)
  • Fresh cilantro (chopped for garnish)
  • Lime wedges (for serving)

Instructions

  • In a large bowl, whisk together honey, lime juice, minced garlic, chili powder, cumin, salt, and pepper.
  • Add the shrimp to the marinade, making sure they are well coated. Let them marinate for at least 15-30 minutes.
  • Heat a skillet over medium-high heat. Add a splash of oil once hot.
  • Cook the shrimp for about 2-3 minutes on each side until they turn pink and opaque.
  • While the shrimp are cooking, warm the tortillas in a separate pan or microwave until pliable.
  • Assemble the tacos by placing a generous portion of shrimp on each tortilla.
  • Top with shredded cabbage, avocado slices, and a sprinkle of fresh cilantro.
  • Serve with lime wedges on the side.
