- 1 pound shrimp (peeled and deveined)
- 1/4 cup honey
- 1/4 cup fresh lime juice (about 2-3 limes)
- 2 cloves garlic (minced)
- 1 teaspoon chili powder
- 1/2 teaspoon cumin
- Salt and pepper (to taste)
- 8 small corn or flour tortillas
- 1 cup shredded cabbage (green or purple)
- 1 avocado (sliced)
- Fresh cilantro (chopped for garnish)
- Lime wedges (for serving)
Instructions
- In a large bowl, whisk together honey, lime juice, minced garlic, chili powder, cumin, salt, and pepper.
- Add the shrimp to the marinade, making sure they are well coated. Let them marinate for at least 15-30 minutes.
- Heat a skillet over medium-high heat. Add a splash of oil once hot.
- Cook the shrimp for about 2-3 minutes on each side until they turn pink and opaque.
- While the shrimp are cooking, warm the tortillas in a separate pan or microwave until pliable.
- Assemble the tacos by placing a generous portion of shrimp on each tortilla.
- Top with shredded cabbage, avocado slices, and a sprinkle of fresh cilantro.
- Serve with lime wedges on the side.
