  • 2 tablespoons honey
  • 2 tablespoons lime juice
  • 1 tablespoon olive oil
  • 1 bell pepper (chopped)
  • 1 small onion (diced)
  • 2 cloves garlic (minced)
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • Salt and pepper (to taste)
  • Fresh cilantro (for garnish (optional))
  • Tortillas (for serving)

Instructions

  • Start by marinating the chicken. In a bowl, mix the honey, lime juice, chili powder, cumin, salt, and pepper. Add the diced chicken and let it sit for about 10-15 minutes.
  • Heat the olive oil in a large skillet over medium heat. Once hot, add the marinated chicken, cooking for about 5-7 minutes or until the chicken is cooked through and no longer pink.
  • Add the chopped bell pepper, onion, and minced garlic to the skillet. Cook for an additional 5 minutes until the veggies are tender and fragrant.
  • Once everything is cooked, give it a good stir and taste for seasoning. Adjust if necessary. Remove from heat.
  • Serve warm, garnished with fresh cilantro, and enjoy with tortillas!
