- 1 lb chicken breast (diced)
- 2 tablespoons honey
- 2 tablespoons lime juice
- 1 tablespoon olive oil
- 1 bell pepper (chopped)
- 1 small onion (diced)
- 2 cloves garlic (minced)
- 1 teaspoon chili powder
- 1 teaspoon cumin
- Salt and pepper (to taste)
- Fresh cilantro (for garnish (optional))
- Tortillas (for serving)
Instructions
- Start by marinating the chicken. In a bowl, mix the honey, lime juice, chili powder, cumin, salt, and pepper. Add the diced chicken and let it sit for about 10-15 minutes.
- Heat the olive oil in a large skillet over medium heat. Once hot, add the marinated chicken, cooking for about 5-7 minutes or until the chicken is cooked through and no longer pink.
- Add the chopped bell pepper, onion, and minced garlic to the skillet. Cook for an additional 5 minutes until the veggies are tender and fragrant.
- Once everything is cooked, give it a good stir and taste for seasoning. Adjust if necessary. Remove from heat.
- Serve warm, garnished with fresh cilantro, and enjoy with tortillas!
