- 1 lb chicken breasts, boneless and skinless
- 1/4 cup honey
- 1/4 cup lime juice (freshly squeezed)
- 2 tablespoons soy sauce
- 1 tablespoon olive oil
- 2 cloves garlic, minced
- 1 teaspoon ground cumin
- Salt and pepper to taste
- 4 cups cooked rice (white or brown)
- 1 cup corn (frozen or fresh)
- 1 cup black beans, drained and rinsed
- 1 cup diced bell peppers
- Fresh cilantro for garnish (optional)
Instructions
- Start by marinating the chicken. In a bowl, combine honey, lime juice, soy sauce, olive oil, minced garlic, cumin, salt, and pepper. Add the chicken and let it marinate for at least 15 minutes.
- While the chicken is marinating, cook your rice according to package instructions. This usually takes about 15-20 minutes.
- After the rice is cooked, heat a skillet over medium heat. Add the marinated chicken and cook for about 6-7 minutes on each side, or until the internal temperature reaches 165°F. The chicken should be golden brown and caramelized.
- Once cooked, let the chicken rest for a few minutes before slicing it into strips.
- In the same skillet, add corn, black beans, and diced bell peppers. Sauté for about 3-4 minutes until the vegetables are tender.
- To assemble your bowls, start with a base of rice. Top with sliced chicken, sautéed vegetables, and cilantro if desired. Serve warm and enjoy!
