  • 1/2 cup unsalted butter, melted
  • 1/4 cup honey
  • 1 cup granulated sugar
  • 3 packages (8-ounce) cream cheese, softened
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 2 tablespoons dried culinary lavender
  • 1/4 cup sour cream
  • 1/4 cup heavy cream

Instructions

  • Preheat your oven to 325°F (160°C) and grease a 9-inch springform pan.
  • In a medium bowl, combine graham cracker crumbs, melted butter, and honey, then press into the bottom of the springform pan.
  • Beat cream cheese with an electric mixer until smooth, about 2-3 minutes.
  • Add sugar and mix well, scraping down the sides as needed.
  • Add eggs one at a time, mixing well, then stir in vanilla extract, dried lavender, sour cream, and heavy cream.
  • Pour the mixture over the crust and smooth the top.
  • Bake for 55-60 minutes or until the center is set but slightly jiggly.
  • Turn off the oven and crack the door; let cool for an hour.
  • Remove from oven, cool to room temperature, then chill for at least 4 hours.
  • Carefully remove the sides of the springform pan, slice, and serve.
