- 1 1/2 cups graham cracker crumbs
- 1/2 cup unsalted butter, melted
- 1/4 cup honey
- 1 cup granulated sugar
- 3 packages (8-ounce) cream cheese, softened
- 3 large eggs
- 1 teaspoon vanilla extract
- 2 tablespoons dried culinary lavender
- 1/4 cup sour cream
- 1/4 cup heavy cream
Instructions
- Preheat your oven to 325°F (160°C) and grease a 9-inch springform pan.
- In a medium bowl, combine graham cracker crumbs, melted butter, and honey, then press into the bottom of the springform pan.
- Beat cream cheese with an electric mixer until smooth, about 2-3 minutes.
- Add sugar and mix well, scraping down the sides as needed.
- Add eggs one at a time, mixing well, then stir in vanilla extract, dried lavender, sour cream, and heavy cream.
- Pour the mixture over the crust and smooth the top.
- Bake for 55-60 minutes or until the center is set but slightly jiggly.
- Turn off the oven and crack the door; let cool for an hour.
- Remove from oven, cool to room temperature, then chill for at least 4 hours.
- Carefully remove the sides of the springform pan, slice, and serve.
