Ingredients
Scale
- 1 pound shrimp (peeled and deveined)
- 1/4 cup honey
- 1/4 cup soy sauce (low sodium recommended)
- 4 cloves garlic (minced)
- 1 tablespoon olive oil
- 1 teaspoon ginger (minced (optional))
- 2 cups cooked rice (white or brown)
- 1 cup broccoli florets (or your choice of veggies)
- 1/4 cup green onions (chopped)
- to taste sesame seeds (for garnish (optional))
Instructions
- In a medium bowl, whisk together honey, soy sauce, minced garlic, and ginger (if using). Set aside.
- Heat olive oil in a large skillet over medium-high heat. Once hot, add the shrimp in a single layer.
- Cook shrimp for about 2-3 minutes on each side, until they turn pink and opaque.
- Pour the honey garlic sauce over the shrimp. Cook for an additional 2-3 minutes, allowing the sauce to thicken slightly.
- While the shrimp cooks, steam or sauté your veggies until tender. I usually steam my broccoli for about 5 minutes.
- Once the shrimp is cooked, serve it over a bed of rice, topped with steamed veggies.
- Garnish with chopped green onions and sesame seeds if desired. Enjoy your meal!
