  • 1/4 cup honey
  • 4 cloves garlic (minced)
  • 2 tablespoons soy sauce
  • 1 tablespoon olive oil
  • 1 teaspoon sesame oil (optional)
  • Salt and pepper to taste
  • 2 cups cooked rice (white, brown, or jasmine)
  • 1 cup broccoli florets
  • 1 cup bell pepper (sliced)
  • 1 carrot (julienned)
  • Sesame seeds for garnish
  • Fresh cilantro or green onions for garnish

Instructions

  • Preheat your oven to 400°F (200°C).
  • In a bowl, whisk together honey, minced garlic, soy sauce, olive oil, and sesame oil until well combined.
  • Place salmon fillets on a lined baking sheet and season with salt and pepper. Brush the honey garlic mixture generously over the salmon.
  • Arrange the broccoli florets, bell peppers, and carrots around the salmon on the baking sheet.
  • Bake for 15-20 minutes, or until the salmon is cooked through and flakes easily with a fork.
  • Prepare your rice according to package instructions.
  • Assemble the bowls by placing rice at the bottom, followed by the salmon and roasted vegetables.
  • Drizzle any remaining honey garlic sauce over the top, and garnish with sesame seeds, cilantro, or green onions.
