Ingredients

  • 4 chicken thighs, bone-in and skin-on
  • 1/3 cup honey
  • 1/4 cup soy sauce
  • 4 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1 teaspoon ground ginger
  • Salt and pepper, to taste
  • 2 cups cooked rice (white or brown)
  • Chopped green onions, for garnish

Instructions

  1. Preheat oven to 375°F (190°C) and prepare chicken thighs.
  2. Whisk honey, soy sauce, garlic, ginger, salt, and pepper in a bowl.
  3. Rub chicken with olive oil and season with salt and pepper.
  4. Marinate chicken with the honey garlic mixture for at least 30 minutes.
  5. Bake chicken in a dish for 35-40 minutes until cooked through.
  6. Prepare rice according to instructions and keep warm.
  7. Baste chicken with reserved marinade 10 minutes before it’s done.
  8. Serve chicken over rice and garnish with green onions.
